Quick Oatmeal with Fruit & Nuts

Here is an idea for a quick, vegan and delicious healthy breakfast!

A colourful oatmeal bowl with strawberries, blueberries, banana slices and a generous spoon of biscuit spread or nut butter!

It takes literally 5 minutes to prepare and when you try it, you won’t be disappointed!

This recipe is very versatile if you want you can add further toppings or keep it simple. Either way, it will be delicious!!

Ingredients (1-2 portion)

 50 g oats
 1 tsp vanilla extract
 ½ tsp dark brown sugar
 150 ml coconut milk
Optional
 1 scoop protein powder
Toppings
 bluberries
 strawberries
 coconut flakes
 banana slices
 chopped walnuts
 ½ tbsp biscut spread or nut butter

 
Instructions

In a small bowl mix the oats with the sugar and milk.

Pour the mixture into a saucepan and cook on medium flame for 5-10 minutes, stirring regularly.

Alternatively, cook it in the microwave on full power for 2 minutes, stir and microwave for further 1-2 minutes.

If you see that it's too thick and more milk and stir until it has the right consistency.

Leave it to cool down for 1-2 minutes and then add the toppings.
