Wild rice and avocado salad

Ingredients (4 portions)

 280 g wild rice
  leek or a small onion
 80 g wild rocket
 1 large avocado (or 2 small avocados)
 1 handful pitted black olives
 2 tbsp extra-virgin olive oil
 ½ lemon
 1 fresh dill
 salt and pepper to taste
 1 tbsp toasted sesame seeds

 

Instructions

Rinse the wild rice and boil it in salted water for 25-30 minutes depending on the package's description.
Note that the wild rice has a harder consistency than the regular rise so don't overcook it.

While the rice cooks, chop the leek finely.
Heat up a large non-stick frying pan, pour 2 tbsp of olive oil and stir-fry the leek on medium eat until golden.

Chop the rocket, the olives and add them into the pan. Stir regularly and adjust with salt, pepper and a sprinkle of chilli if you like that extra kick.

When the rice is ready, add it into the pan, add the sesame seeds and stir-fry at high heat for 2-3 minutes.

Chop the avocado into thin slices, switch off the hob, add the avocado into the pan, mix everything until well combined and adjust with salt and pepper.

Serve with fresh dill and a squeeze of lemon juice
