Easy and Moist (Dairy-free) Banana Bread

Ingredients (1 loaf)

 2 ripe bananas (approx 230g peeled)
 2 eggs
 1 + 1/2 cups flour (230g)
  cup sugar (145g)
 ½ cup sunflower oil (95g)
 2 tsp baking powder (10g)
Optional
 ½ tsp vanilla extract
 ½ tsp cinnamon

 Tips:

No gluten: substitute the wheat flour with ground almonds and rice flour.

No refined sugar: use coconut sugar, dark brown sugar, honey, maple syrup, agave syrup or the sweetener you like

No eggs: use flax egg (1 tbsp flax meal + 3tbsp water) or 1 more banana or unsweetened applesauce (1/4 cup per egg)

What oil: I would recommend sunflower oil, canola oil or any vegetal oil with a neutral taste. Although I'm a big fan of extra virgin olive oil I wouldn't use it for this recipe due to its intense flavour. 

 

Instructions

Preheat the oven to 180°C, grease a loaf tin or cover it with baking paper.

Crack the eggs into a big mixing bowl, add the sugar and whisk until the mixture is smooth.

In a small bowl mash the bananas with a fork and add them to the batter.

Add the vegetable oil, the oat milk and whisk.

Lastly add the flour, baking soda, salt and gently stir until the ingredients are well combined.

Pour the batter into the loaf tin and bake for about 1h or until a toothpick inserted into the middle comes out clean.

Remove the tin from the oven, leave it to cool down for 20-30 minutes, then turn it out onto a plate and serve!
