Quick Beetroot Hummus

Ingredients (1 medium bowl)

 200 g cooked chickpeas
 250 g cooked beetroot
 juice of 1 lemon
 2 tsp tahini (to taste)
 1 tsp ground cumin
 5 tbsp water
 3 tbsp extra-virgin olive oil
 salt to taste
 fresh coriander
 1 clove garlic (optional, to taste)

 
Instructions

Cut the beetroot into small pieces and place them in a blender. Add all the other ingredients and process until smooth. If the consistency is too thick add more water.

Taste and adjust the seasoning, adding more salt or lemon if needed and serve with a sprinkle of fresh coriander.
