DIY Oat Milk

Have you ever tried to make homemade oat milk?

Oat milk is very quick and easy to make – it literally takes less than 10 minutes!

What do you need to make homemade oat milk?

  1. A blender or food processor (see recommendation)
  2. A nut milk bag (like this here) or cheesecloth (like this here)

For the pure unsweetened version – ideal for savory recipes – you just need 3 simple ingredients (oats, water and salt).

For the sweetened version – ideal for breakfast and sweet recipes – you would need to add a sweetener like dried dates, maple syrup, honey, agave syrup and/or flavors like vanilla extract or cocoa powder if you like.

Given that the main ingredient is oat, I would recommend to use good quality oats. Organic rolled oats would be the best but if you don’t have rolled oats you could use porridge oats. If this is the case make sure to rinse the oats properly in order to rinse away the extra starch.

The consistency of this milk is comparable to organic and natural plant-based milks but it’s not frothy as other commercial milks (Oatly for example).

When producing commercial oat milk some companies use enzymes (amylase) to break down the oat starch and add fats, thickeners, emulsifiers and stabilizers (for example canola oil and Dipotassium Phosphate) that change the milk consistency making it creamier. To reproduce this process you could consider adding 1 or 2 tsp of vegetable oil or a pinch of xanthan gum (thickener) which will make the milk more stable and thick but on the other hand, you are adding fats and non-natural ingredients which compromise its health benefits.

Ingredients (1 jug)

Pure Unsweetened
 1 cup organic rolled oats
 4 cups cold water
 1 pinch salt
Additional for Sweetened version
 1 or 2 tbsp maple syrup (or sweetener of choice)
Optional
 4 dates
 ½ tsp vanilla extract

 

Instructions

Rinse the oats in cold running water.

Pour all the ingredients into a blender and blitz for 15/20 seconds at high speed.

Filter the milk using a nut milk bag or cheesecloth.

4

Store in the fridge for 4/5 days.
