As promised here is the recipe for my moist banana & yogurt loaf cake.
I’ve prepared it yesterday and it’s all gone! It’s a shame you couldn’t feel the smell in my kitchen. I love the perfume of cakes that spreads in the house! That’s probably one of the reasons why I love baking so much! When you bake the smell is always awesome and makes me feel “home” and happy.
Going back to the recipe, this is very simple & quick recipe with very basic ingredients.
I would recommend using dark brown sugar which in my opinion is nicer as it has a slightly deeper flavor with notes of caramel and toffee. But this a completely personal choice, if you don’t like the dark brown sugar go for the normal one or use any other sweetener, honey, agave syrup, maple syrup… They are all interchangeable.
For what concern the yogurt, you can use the one you like more. I used plain yogurt because it’s my favourite but you can also use vanilla yogurt, lemon yogurt, orange yogurt. Try and experiment the version you like the most! If you have a milk allergy or you are lactose intolerant use any plant-based yogurt. It works perfectly!
